Coconut rice

I discovered coconut rice while exploring some Indonesian recipes. It all started with a crossword mentionning a famous salad (gado-gado) and then one link led to another...

Putting it together

  • Rince the rice 3 or 4 times, changing the water each time to get rid of starch that makes it stick.
  • Optional: leave rice to soak for an hour in clear water.
  • Put in an closing oven dish and pre-heat oven at 180C.
  • Optional: add pandam leaves or kaffir lime leaves if you have them
  • For 1 measure of rice, put 1 measure of coconut milk and 1 measure of water in a pot. Bring to boil.
  • When boiling, pour on rice and put the covered dish in the oven for about 25 minutes, when most liquid is gone.
  • Take out and let it rest a couple of minutes before serving.
That's it ! It takes longer to describe than to make.
It's the perfect side dish for any asian dish.
